Spine / Backbone / Pork Spine (often referring to pork spine)

When people talk about the spine, they usually mean the vertebral column of a pig, also known as the dragon bone or main beam bone. It has relatively little meat but plenty of bone marrow and fat, resulting in an exceptionally rich and flavorful broth.
